Sweet Dreams is an organic London Dry built on eleven named botanicals, bottled at 41% ABV in 500ml near Verona. Juniper, coriander, angelica, chamomile, fennel, mallow, rosehip, damask rose, lavender, elderflower and lemon balm are all grown or selected by the farm that makes it, and the spirit itself comes from organic soft wheat.

Flowers set the tone, but they are held in place by roots and seeds. Coriander, angelica and fennel give the palate a dry botanical frame; lavender, elderflower and damask rose supply the fragrance; chamomile and lemon balm soften the middle without any sweetness being added. Mallow and rosehip sit further back, adding body and a faint tartness that keeps the whole thing from turning into perfume. Eleven plants is a long list, yet none of them shouts, and the farm grows or selects every one of them itself, which is unusual even among organic producers of spirits.

The gin comes from Società Agricola Pernigo, an organic farm in the Valpantena valley above Verona, and its name means spirit of the stars. The makers think of it as a goodnight gin, something to drink slowly in the evening, and suggest a simple gin and soda for that purpose. The half-litre bottle and the calm, chamomile-led profile both point the same way.

A tonic serve works equally well if you keep it light. Pour 4cl over a glass of ice, add 10cl of a classic tonic, well chilled, then slip in a small sprig of lemon balm and a few chamomile flowers. Both garnishes repeat ingredients already in the recipe, which is the surest way to stay faithful to it. Stir once, no more, and leave sugar out of the glass entirely.
