As with every Ghosts of The Ocean gin, it comes from Ocean Distilling Co on São Miguel, the largest island of the Azores, at 40% ABV.
The brand pairs gin-making with conservation. A donation from every bottle sold goes to the Ocean Azores Foundation, which supports marine research and the protection of whales and other cetaceans, and rare whale photography inspires the bottle designs. The motto sums up the idea: From The Ocean. For The Ocean. Ali Bullock also owns the Gin Library at the Solar Branco Eco Estate, a gin collection with a worldwide reputation.
This trade edition is designed for the bar: a dependable, versatile gin for daily work behind the counter, from simple highballs to stirred classics. To place it in the house style, the core Ghosts of The Ocean gin draws on Azorean mint, juniper, rosemary, cardamom, lemon, thyme, angelica, coriander seed, lemon myrtle and lime, a mix of island herbs and bright citrus.
The official pairing is simple and very much a bartender's choice: Indian tonic water, ice, rosemary and lime. Rosemary brings a resinous, herbal aroma that suits juniper, lime adds sharp, fresh acidity, and the quinine of the tonic ties them together. Other editions of the range, such as Baleia, Medusa Pink or Ebisu Japanese Dry, explore different directions, but the Bartenders Edition stays focused on the essentials of a well-made gin and tonic.
