Thin apple sliceNo apple juice, no sweetening, no flavouring after the still. The fruit here is real apple worked through a London Dry, which is the strictest gin category there is: once the spirit comes off the still, only water may be added, so the apples have to do their work during distillation or not at all. That single rule separates this bottle from most of the apple gins on the shelf beside it.
The apples come from the orchard at Ampleforth Abbey in North Yorkshire, planted more than two hundred years ago and now running to some fifteen hundred trees across seven acres, with more than fifty varieties ripening between August and January and no chemicals used on them. A harvest spread over five months is a different proposition from one packed into two weeks. Heritage apples are not supermarket apples either: they are sharper, more aromatic, often higher in tannin, and several varieties together give something far more complex than a single one. Hand-picking is the only way to work an orchard of that age, since machinery would struggle with the ground long before it reached the trees.
What reaches the glass is apple as skin and acidity rather than apple as pudding, with juniper clearly in front of it. At 42.5% in a 70 cl bottle, the strength is slightly above the house standard, which helps the fruit carry. The collaboration between York Gin and the abbey was confirmed in the autumn of 2025, and the bottling is seasonal, made while the fruit is there and sold until stocks run out.
A light tonic keeps the quinine from fighting the apple. Four centilitres of gin, ten of tonic, a glass packed with hard ice, and a thin slice of apple laid on top. Assemble it cold and drink it quickly. Cut the slice thin and cut it late: a thick wedge browns, floats and tastes of nothing.
