Sky Wave Old Tom Gin Description

Sky Wave Old Tom Gin revisits an older English style with a light sweetness and a measured touch of spice. Bottled at 41% vol. in a 700 ml format, it was named a winner in the Old Tom category at The Gin Guide Awards 2024. An Old Tom belongs halfway between a London Dry and a liqueur: sweetened, but only just, and the interest of the style lies in how narrow that margin stays. Juniper is the one botanical named here, and at 41% it has room to hold the frame while the sugar does its work.

The aroma is light and citrus-led rather than rich or confectionery. Sweetness softens the first impression, while drier notes keep the gin poised and prevent the style from feeling syrupy. A discreet spicy accent adds warmth without obscuring the fresher citrus character.

The palate has the fuller body associated with Old Tom gin, but the sweetness remains controlled. Citrus travels through the centre of the sip and meets a firmer dry edge before the finish. That contrast gives the gin enough structure for mixed drinks while preserving its historical reference.

For the producer's gin and tonic, combine one part Old Tom with two parts neutral tonic over firm ice. A fresh lime slice is the published garnish: its acidity keeps the gentle sweetness in proportion without covering the lightly spicy finish. The gin may also be served neat, over ice or with ginger ale.

The 2024 Gin Guide recognition supports this reading of the style, with judges noting citrus, controlled sweetness and a full mouthfeel. Citrus held in balance with sweetness is also what separates a modern Old Tom from the heavily sugared versions the style is usually remembered for. Poured over ice with a dry tonic, it behaves more like a full-bodied dry gin than like a sweetened one.
