See the perfect serveGin L'Immortel Mattei brings Corsican citrus and aromatic plants into a distilled gin bottled at 43% vol. Juniper is joined by Corsican citron and lemon, marjoram, bay laurel, fennel and immortelle. The botanicals are macerated and then distilled in the Holstein still at Distillerie L.N. Mattei in Aléria.
Citron and lemon give the opening a bright, fragrant peel character rather than simple acidity. Juniper provides a dry resinous centre, while marjoram and laurel introduce the scent of crushed Mediterranean leaves. Immortelle adds a warm floral nuance that is recognisable without turning the gin sweet.
The palate moves from citrus oils towards herbs and gentle aniseed from the fennel. The different plants remain distinct, yet the juniper keeps the composition recognisably gin-led. A lightly bitter herbal line and the warmth of immortelle persist through the finish.
Fever-Tree Mediterranean Tonic Water supports the herbal side without covering the Corsican fruit. A strip of citron peel and a small immortelle sprig echo the recipe directly. Serve over clear ice and avoid an oversized garnish, as the dried flower can become dominant when used too freely.
Launched in 2021, the gin extends the work of a Corsican house founded by Louis Napoléon Mattei in 1872. Its gold medal at the 2025 Concours Général Agricole adds a recent point of reference, but the bottle's interest remains rooted in the clear relationship between local citrus, aromatic leaves and immortelle. Gentle dilution reveals the fennel before the floral finish returns.

Immortelle sprigFill a balloon glass with clear ice, add 4 cl of Gin L'Immortel Mattei and 10 cl of Fever-Tree Mediterranean Tonic Water, then stir gently.
Add Corsican citron peel and a small immortelle sprig inside the glass, with both garnishes repeated beside it.
