The British beet-sugar spirit uses less juniper than the distillery's other gins, with increased liquorice and angelica before an infusion of honey from Cotswolds hives.
Honey gives the aroma a soft floral warmth rather than the blunt sweetness of added syrup. Liquorice reinforces the round texture, angelica contributes a dry earthy note and juniper remains present as a restrained resinous thread. The palate is smooth and gently sweet, but the roots prevent it from becoming heavy. Honey broadens the middle of the sip, followed by liquorice and a drier angelica finish. This balance makes the historical style easy to recognise without turning the gin into a liqueur.
