Mayfair Six PM Gin is bottled at 100 British proof, equivalent to 57.6% vol. Its five-botanical recipe combines juniper, orris, coriander, angelica and winter savoury. The name refers to six in the evening as an international moment for a drink, but the strength and concise recipe define the liquid more clearly than the idea behind the label.

Juniper leads with a full resinous aroma. Coriander adds citrus brightness, while angelica contributes a dry earthy and faintly liquorice-like note. Orris helps bind the aromas, and winter savoury gives the profile a distinctive herbal spice.

The high alcoholic strength increases both weight and aromatic intensity. Pine, dry roots and citrus spice arrive in quick succession, with the savoury herb becoming more apparent after dilution. Despite its power, the short botanical list keeps the flavour focused rather than crowded.

Fill a balloon glass with clear ice, add 4 cl of Mayfair Six PM Gin and 10 cl of Fever-Tree Indian Tonic Water, then stir gently.

Add lemon peel and three juniper berries inside the glass, and repeat the garnish on a small dish beside it.
