Its recipe draws directly on the plants, herbs and citrus orchards of Mallorca. Local juniper, fresh lemon, orange and lime peels sit beside almond blossom, orange leaves, tomato branches and lavender. Coriander, orris, cassia, cardamom, angelica, liquorice and rhubarb root give the recipe its classical frame. Bottled at 46.6% ABV, it has the strength to carry this unusually detailed botanical composition without losing precision.
The aroma opens with dry juniper and the fragrant oil of freshly cut citrus peel. Orange is the broadest note, lemon gives brightness and lime adds a sharper edge. Lavender and almond blossom appear as light floral accents rather than perfume. Orange leaf and tomato branch bring a green, almost leafy freshness that makes the profile feel rooted in a living Mallorcan garden. Beneath them, coriander and cardamom contribute fine spice, while orris, angelica and rhubarb root give the nose a cool, earthy depth.
The palate is firm and dry at first, with juniper and citrus held in close balance. The higher bottling strength gives the oils a generous texture, then the more unusual local plants broaden the middle with herbal and floral detail. Cassia warms the progression without turning sweet; liquorice softens the edges, and the roots keep the finish long and composed. The result remains unmistakably a gin, but its character is more layered than a simple citrus recipe. It is rewarding neat over one large cube and remains highly articulate in a measured gin and tonic.
For the Perfect Serve, fill a balloon glass with clear ice, add 4 cl of Palma Gin and 10 cl of Fever-Tree Mediterranean Tonic Water, then stir gently. Place a broad orange peel and two edible almond blossoms in the glass, and repeat both on a small plate beside it.
