Four citrus fruits shape Palma Citrus Gin from its first aroma to its finish. Mallorca Distillery selects organic lemon, orange, mandarin and lime peels, then brings them together with juniper, coriander, lemon balm and a foundation of orris, angelica and liquorice root. Distilled in Palma and bottled at 42% ABV, the gin derives its bright character from the fragrant oils of the fresh peels. Mandarin and lemon balm distinguish it from the original Palma Gin, adding ripe fruit and a fresh green accent to the dry botanical base.

The nose moves through several shades of citrus instead of presenting one broad lemon note. Lemon is brisk and direct, orange provides roundness, lime sharpens the top line and mandarin adds a softer, fragrant sweetness. Juniper remains visible behind the fruit, supported by the dry spice of coriander. Lemon balm links peel to leaf with a cool, gently herbal tone. Orris and angelica steady the aroma, ensuring that the lively opening retains depth and does not become fleeting or confectionary.
On the palate, the first impression is juicy in aroma but dry in structure. Orange and mandarin fill the centre, while lemon and lime bring energy to the edges. Coriander introduces a fine peppery lift, and the roots keep the texture controlled through the finish. Liquorice adds a small amount of natural roundness without obscuring the citrus oils. At 42% ABV, the gin carries enough weight for the four fruits to remain distinct after dilutionDilutionThe water added by melting ice. In the right amount it opens the aromas and softens the alcohol; too much flattens the drink.Glossary, making it particularly effective in a bright, uncomplicated gin and tonic.
