Garnish
Curled lemon peelStrawberry gives IBZ Pink Strawberry its soft fruit character, while citrus and juniper keep the profile fresh and structured. Produced in Ibiza and bottled at 37.5% ABV, it combines juniper berries, strawberries and citrus fruits in a distilled gin intended to be the mildest and most refreshing member of the IBZ family. The recipe remains compact: strawberry supplies the central fruit, citrus gives brightness and juniper keeps the drink anchored in gin rather than allowing it to drift toward a simple berry spirit.
The aroma begins with ripe strawberry, closer to freshly cut fruit than to boiled sweets. Citrus follows with a clean peel-like freshness that lightens the berry and gives the bouquet more movement. Juniper sits underneath with a dry, lightly resinous line. The three elements are easy to follow because none is buried beneath heavy spice or an elaborate botanical list. A gentle floral impression comes naturally from the strawberry, while the lower bottling strength keeps the nose soft and approachable.
On the palate, strawberry gives the opening a rounded fruit texture, then citrus adds a lively edge through the middle. Juniper restores dryness as the first sweetness of aroma begins to fade. The 37.5% strength favours an easy, refreshing progression, but the finish retains enough peel and berry skin to avoid a syrupy sensation. Served very cold, the gin becomes especially clean and works well as an uncomplicated aperitif. The key is to use a tonic with little sugar and a garnish that supports the fruit without multiplying it.
For the Perfect Serve, fill a balloon glass with clear ice, add 4 cl of IBZ Pink Strawberry and 10 cl of Fever-Tree Naturally Light Tonic Water, then stir gently. Place one thin strawberry slice and a curled lemon peel in the glass, and repeat both on a small plate beside it. The strawberry follows the gin's central flavour, lemon gives the fruit a fresh outline, and the light tonic maintains a dry, thirst-quenching finish.
