Gin de Binche Fruits Rouges - Edition Limitee connects Plus Oultre Distillery with the fruit-growing landscape around Binche. The raspberries, blackcurrants, redcurrants and strawberries come from Ferme du Spamboux in Mont-Sainte-Geneviève, a few kilometres from the distillery. They are worked into a 40% Belgian gin in which juniper remains present beneath the fruit. The limited release is therefore rooted in a specific local harvest rather than in a generic red-berry flavour.

Each of the four fruits has a distinct role. Raspberry gives the aroma a delicate, fragrant lift; blackcurrant contributes darker depth; redcurrant adds a sharper, more vivid edge; and strawberry rounds the combination with softer fruit. The strawberry also contributes to the gin's natural red colour, obtained without artificial colouring. The producer describes the fruits as carefully harvested and artisanally distilled to retain freshness and aromatic intensity, while the juniper is kept clear enough to support the blend.

The nose is led by fresh berry aromas, moving from raspberry and strawberry towards the deeper tone of blackcurrant. Redcurrant brings brightness and prevents the profile from settling into simple sweetness. On the palate, the first impression is rounded and fruity, then acidity gives the middle more energy before juniper restores a dry botanical outline. At 40% ABV, the gin has enough structure to carry the fruit cleanly. The finish remains lively, with berry freshness and a discreet return of juniper rather than the weight of a liqueur.

For a balanced long drink, use 5 cl of gin, 10 cl of Fever-Tree Indian Tonic Water and plenty of clear ice. Finish with one fresh raspberry and a short orange peel, leaving the fruit whole so that it perfumes the glass without adding pulp. The tonic stays deliberately neutral and the orange adds a fine aromatic lift. This measured serve keeps the natural berry colour visible while allowing raspberry, blackcurrant, redcurrant, strawberry and juniper to remain distinct.
