The 50 cl bottle contains a 40% Belgian flavored gin built around fresh strawberries and a selected blend of peppers. The strawberries come from Ferme du Spamboux in Mont-Sainte-Geneviève, continuing the distillery's work with fruit grown close to Binche. The precise pepper varieties are not named, so the recipe is best understood through the deliberate contrast between ripe fruit, juniper and measured spice.
Fresh strawberries are handled to preserve their natural aroma, then a light cold infusion after distillation gives the gin its delicate red colour without artificial colouring. The peppers are used to support the fruit rather than overwhelm it. Their purpose is to add freshness, length and a gentle tension against the strawberry's rounder character. Juniper keeps the drink anchored in gin, an important detail in a recipe whose colour and central fruit could otherwise suggest a sweeter style than the producer intends.
The nose begins with fresh strawberry, fragrant and immediately recognisable, followed by the drier scent of juniper and a light peppery lift. On the palate, the fruit opens with roundness but does not remain alone: the pepper blend brings definition through the middle and carries the flavour further into the finish. The 40% strength gives the combination enough structure for the strawberry to stay fresh rather than jammy. The final impression balances berry, botanical dryness and a discreet spicy warmth.
In a gin and tonic, simplicity protects that balance. Pour 5 cl over clear ice, add 10 cl of Fever-Tree Indian Tonic Water and garnish with half a fresh strawberry and two or three lightly cracked black peppercorns. Place the pepper on the strawberry rather than scattering it through the drink.
