lemon peel and thyme sprigFour botanicals from four European and North African origins give Barber’s London Dry Gin its direct, traditional character. Croatian juniper, Moroccan coriander, Spanish thyme and French angelica root are brought together in a 40% ABV London dry gin that places dryness and botanical definition ahead of sweetness. The recipe is concise, but each ingredient has a clear role, making this a gin whose identity comes from precision rather than an unusually long botanical list.
Croatian juniper provides the central pine and resin notes. Moroccan coriander brings citrus-edged spice, while Spanish thyme adds a dry herbal accent that becomes especially clear through the middle of the palate. French angelica root anchors those brighter notes with an earthy, lightly bitter firmness. The four ingredients move in a logical order: juniper first, coriander and thyme through the centre, then angelica drawing the finish back towards a classic dry style.
The nose opens cleanly on juniper, followed by coriander’s freshness and the savoury scent of thyme. On the palate, the gin remains taut rather than rounded, with pine, herbs and spice held in close balance. The texture is lean and the alcohol supports the botanicals without turning hot. Angelica gives the finish a root-like dryness, while thyme leaves a final green note that distinguishes Barber’s from citrus-led London dry gins.
Its spare botanical recipe makes Barber’s well suited to a straightforward gin and tonic or a dry Martini. For a long drink, pour 5 cl over plenty of clear ice, add 12 cl of Fever-Tree Indian Tonic Water and finish with a narrow lemon peel and a short sprig of thyme. Lemon lifts the coriander without adding sweetness, and thyme recalls one of the gin’s defining botanicals. Keep the garnish restrained so that Croatian juniper remains at the centre of the glass.
