lemon peel and thyme sprigGöta Gin began with four friends from the western shore of Lake Como: Dario, Filippo, Andrea and Francesco. After developing the recipe on a small still, they entrusted production to Anonima Distillazioni in Gubbio, Umbria. The name comes from a local word for “drop”, recalling the spirit leaving the still little by little. Bottled at 43% ABV in a 50 cl bottle, Göta is a London Dry Gin made in small batches through column distillation with suspended botanicals.
Eight botanicals shape the recipe. Juniper from the Umbrian-Tuscan Apennines supplies a concentrated balsamic and resinous core. Angelica binds the composition and adds dry root depth. Lemon peel and bitter orange peel bring a layered citrus register, while olive leaves and thyme provide the persistent herbal centre. Sweet mint introduces cool freshness, and acacia flowers soften the sharper edges with a restrained floral touch.
The nose is led by juniper, thyme and olive leaves, then mint opens a brighter, cooler path toward lemon and bitter orange. The palate is full but remains dry, with citrus and herbs progressing together rather than competing. Angelica gives the centre a firm root structure, the mint lightens the texture, and acacia appears quietly toward the close. The finish returns to juniper and thyme, clean, balsamic and gently floral.
Build the gin tonic with 5 cl of Göta Gin, 12 cl of Fever-Tree Mediterranean Tonic Water and plenty of clear ice. Add a narrow lemon peel and a short thyme sprig. The tonic extends the Italian herbs, lemon sharpens the citrus layer and thyme reinforces the balsamic finish. Keep the sprig small so that mint, olive leaf and acacia can still be read beneath it.
