The French producer matures the gin in casks made by Tonnellerie Francis Miquel, then uses a post-ageing maceration to bring fruit back into the foreground. Bottled at 42.3% ABV in a 50 cl format, it is built from organic wheat alcohol, juniper, coriander, fresh oranges, sultanas, peppers and dried pears, all certified organic.
The order of production creates a layered profile. Oak gives the base toast, gentle tannin and a rounder texture. Juniper and coriander preserve a dry botanical structure, while fresh orange introduces brightness through the middle of the palate. Sultanas deepen the fruit with a vinous, softly dried character; pepper provides lift and keeps the finish from becoming heavy. The final pear maceration adds a ripe, fragrant note that is clearer and fresher than it would be after a long stay inside the barrel.
At 42.3%, the gin has enough body to carry the oak without losing detail. The nose moves from pear and orange toward juniper, warm spice and polished wood. On the palate, the fruit feels rounded rather than sugary, supported by the grain spirit and a dry peppered line. The finish brings the cask and dried fruit together, making the bottle a natural choice for drinkers who enjoy both gin's botanical precision and the slower development associated with aged spirits.
Serve 4 cl over one large clear cube and add 8 cl of Fever-Tree Ginger Ale, using a short glass rather than a tall balloon. Add a dried pear slice and an orange peel to the glass, then present a second pair on a small tray beside it. The restrained measure of ginger ale echoes the spice and lifts the pear without covering the oak.
