Before ageing, the recipe brings together juniper, coriander, kaffir lime from Réunion, Nepalese Timut pepper, Chinese goji berries and Espelette pepper. The limited release is bottled at 43% ABV in 70 cl, with the long maturation giving the clear distillate a deep golden colour.
The cask changes the balance without erasing the gin underneath. Juniper and coriander retain a dry botanical frame, kaffir lime provides an aromatic citrus lift, and Timut pepper adds a bright, almost grapefruit-like spice. Goji berries and Espelette pepper contribute fruit and warmth. Sauternes-seasoned oak then brings roundness, dried-fruit notes and a softer texture, drawing these ingredients into a broader, more patient profile.
The first nose favours dried apricot, golden fruit and polished wood before the citrus and pepper become clearer. On the palate, the ageing gives weight through the middle, but the botanical structure returns toward the finish. The 43% strength is enough to carry both sides: the rich cask character and the sharper details of lime, juniper and spice. A neat taste is the best starting point, followed by one large cube if a gentler texture is preferred.
Pour 4 cl into a small tumbler over one large clear ice cube. Express a strip of kaffir-lime peel above the glass and add it with a small piece of dried apricot, then present a second peel and apricot on a dish beside it. No tonic is used. This quiet preparation keeps the nearly four years of Sauternes-cask ageing at the centre while recalling the citrus and dried-fruit tones already present in the gin.
