Seven Hills Tokaj Gin Description

Seven Hills Tokaj Gin combines the wine heritage of Tokaj with botanicals drawn from the volcanic Zemplen landscape. Harslevelu, one of the region's emblematic grape varieties, gives the recipe a direct connection to its place of origin. At 47% ABV, the gin has the strength to carry a generous botanical composition while keeping the fruit and flowers clearly defined. The result earned the title of World's Best Contemporary Style Gin at the World Gin Awards in 2021.

The recipe brings together twenty-one botanicals. Juniper and Moroccan coriander establish the dry core. Blackcurrant, pink grapefruit and sea buckthorn bring tart fruit and bright acidity, while cubeb and pink peppercorn add a fragrant, gently peppery lift. Pine buds from the Zemplen hills introduce a clean resinous line. Elderflower softens the edges, and Harslevelu grapes contribute a ripe yet poised fruit character that is unusual in gin. These signatures give the generous composition a clear direction rather than a crowded impression.

Part of the detail comes from the way those ingredients are handled. Selected dried botanicals macerate for twenty-four hours, fresh ingredients are placed in the vapour basket, and both the Harslevelu grapes and elderflower undergo separate fermentation and distillation before joining the final composition. That layered process explains why the palate moves from firm juniper and citrus to darker berries, floral tones and a long spicy finish instead of delivering every aroma at once.

Fever-Tree Indian Tonic Water keeps this structure intact. Serve 4 cl over large clear ice, add 10 cl of tonic slowly, then finish with a fine pink grapefruit peel and two or three blackcurrants. The grapefruit sharpens the citrus line while the berries recall the deeper fruit at the centre of the gin. Keeping the garnish restrained allows the pine, pepper and Harslevelu notes to remain visible through the bubbles.
