Stillhouse Gin Description

Stillhouse Gin comes from Swakopmund, where the Namib Desert meets the Atlantic. Stillhouse Atlantic makes its own neutral base spirit and uses steam infusion for a recipe of fourteen botanicals, ten of them local to Namibia. The producer names wild hibiscus, baobab, !Nara melon and Atlantic seaweed among the ingredients that shape the gin, alongside juniper. At 43%, it is a dry gin whose regional ingredients form a coherent, layered botanical composition.

Juniper gives the first clear line, followed by citrus-like freshness and a floral edge from hibiscus. Baobab brings a subtle tartness and soft fruit character, while the seaweed contributes a dry mineral and savoury nuance rather than literal salt. The !Nara melon is associated with a gentler, rounded note that sits behind the brighter elements. Steam infusion helps the aromatics feel lifted and clean, so the palate stays precise even as the recipe moves between green, floral, fruit and mineral impressions.

What makes Stillhouse Gin memorable is its sense of place without any heavy-handedness. The desert-and-ocean setting explains why ingredients such as baobab and seaweed can coexist, but the glass does not ask the drinker to decode a landscape. It offers a dry, fresh gin with enough texture to keep the finish interesting. That balance makes it a good reference for someone looking beyond the usual European botanical lists while still wanting juniper to lead the conversation.

The Perfect Serve uses Indian tonic, clear ice, grapefruit peel and a few pink peppercorns. Grapefruit brings an aromatic bitterness that works with the dry mineral side, while pink pepper adds a small floral lift. Keep the garnish spare and the tonic cold. The drink should feel airy and refreshing, allowing the unusual Namibian ingredients to register one by one.

Use only a few peppercorns. They should lift the floral side without covering the gin's dry mineral detail.
