Fresh juniper, fir and water from Shieldgreen Spring define 1881 Hydro Gin from its first aromatic impression. Distilled at Peebles Hydro in the Scottish Borders, this London Dry takes its name from the year in which the hotel opened. The spring runs directly into the site and supplies the water used for the gin, while a selection of local botanicals connects the recipe to the wooded landscape around Peebles. Bottled at 40% ABV, Hydro Gin combines a classic dry structure with a distinctly green and citrus-led profile.

The nose opens with piney juniper and fir, sharpened by pink grapefruit and the fragrant lift of cardamom. On the palate, hawthorn and birch add a dry woodland character before cassia introduces gentle warmth. Bay leaf brings a savoury herbal note that becomes clearer towards the finish, where grapefruit returns with a clean citrus edge. The texture remains smooth and composed, allowing the resinous, herbal and earthy details to unfold without making the gin feel heavy.

Its character lies in the balance between familiar London Dry markers and botanicals that evoke the Scottish Borders.
