Black Cockatoo Signature Gin was created in the forests of south-west Western Australia as a full-bodied dry gin suited to both a simple tonic and classic cocktails. Bottled at 42% ABV, it combines traditional botanicals with ingredients associated with its Australian setting. Juniper is used generously and remains the principal flavour, supported by coriander, allspice, clove, liquorice root, fennel, lemon myrtle, native oregano, macadamia and four citrus peels: grapefruit, lemon, orange and lime.

The nose opens with firm juniper and a broad sweep of fresh citrus oils. Grapefruit contributes a lightly bitter edge, lemon and lime sharpen the profile, and orange brings a rounder aromatic note. Lemon myrtle intensifies the citrus freshness without replacing the juniper. Coriander adds dry spice, followed by the warmer tones of allspice, clove and fennel. Liquorice root softens the middle of the palate, while native oregano leaves a restrained herbal and savoury accent in the finish.

Despite the length of the botanical list, the gin remains coherent. Its high proportion of juniper gives the recipe a dry centre, the citrus peels provide immediate brightness, and the spices build depth rather than heat. The Australian botanicals are integrated into this classic frame instead of being treated as decoration. The result is aromatic and full-bodied, with enough structure for a Martini or Negroni and enough freshness to remain lively in a long drink.

The distillery pairs its Signature Gin with Mediterranean tonic and orange, a combination followed by the GinToLove Perfect Serve. Fill a chilled balloon glass with clear ice, pour 4 cl of gin and add 10 cl of Fever-Tree Mediterranean Tonic Water. Stir gently and garnish with one fresh orange slice. The orange releases the softer citrus oils already present in the recipe, while the tonic's herbal character accompanies the oregano and spices without obscuring the juniper.
