Gin Eva S'Horabaixa is a 50 cl dry gin built from three named botanicals: thyme from the Serra de Tramuntana, juniper and lemon from the Sóller valley. The recipe reads like a small map of Mallorca, but the tasting point is very practical. Thyme brings the herbal spine, lemon gives lift, and juniper keeps the gin dry. It was Spain Country Winner 2024 in Contemporary Style at the World Gin Awards.

The nose is immediately herbal, with thyme arriving before the citrus becomes fully open. Lemon then brings freshness and a clean edge, while juniper adds resin and dryness. On the palate, S'Horabaixa is not sweet or perfumed.
