The distillery’s own description links the profile to fermented juniper, citrus spice and white pepper, which makes Funk feel more animated than the original bottling while staying recognisably dry and juniper-centred.
The nose has red-fruit lift, lemon and a slightly wild juniper character. That does not make the gin sweet; it gives a more savoury, fermented edge to the usual pine and resin. On the palate, lemon arrives first, then the creamy texture associated with beeswax rounds the middle. Sea salt keeps the profile clean and defined. The finish carries juniper, white-pepper spice and a dry citrus echo, with enough unusual detail to make the gin memorable without losing balance.
