Beyla Honey & Raspberry Old Tom Gin Description

Beyla Honey & Raspberry Old Tom Gin takes the Kirkjuvagr base into a sweeter, fruit-led direction without hiding the gin behind liqueur-like weight. The confirmed additions are Scottish raspberries and Orkney honey, two ingredients that make sense together: raspberry brings colour, tart fruit and freshness; honey gives the Old Tom roundness and a softer finish. Bottled at 40% ABV, it is designed to be generous rather than austere.

The aroma opens with fresh red fruit before the honey becomes apparent. Raspberry gives a bright, slightly tangy top note, while juniper keeps enough dry structure underneath to stop the profile from drifting into syrup. On the palate, the first sip is softer than a dry gin, but it should not feel flat. Honey rounds the texture, raspberry brings a lively fruit edge, and the botanical base adds a light herbal firmness through the finish. The most important balance is between fruit and sweetness: Beyla works best when the raspberry stays vivid and the honey acts as polish rather than sugar for its own sake.

A Mediterranean tonic is a better match than a very bitter tonic here. Serve 4 cl of gin with 12 cl of tonic over ice, then garnish with two raspberries and a tiny piece of honeycomb or a short lemon peel if honeycomb is not available. The garnish mirrors the confirmed ingredients and keeps the perfect serve in line with the description. In cocktails, Beyla can soften a Collins or bring a fruit-honey accent to a Clover Club-style variation.

This gin is valuable because it gives the Old Tom style an Orcadian identity. It is approachable, colourful and easy to serve, but the most successful glass is still the one that respects the gin underneath the fruit.

Raspberry and honeycomb follow the confirmed ingredients. Mediterranean tonic keeps the drink fresh and prevents the Old Tom sweetness from becoming heavy.
