Vára Gin Description

Vára Gin is the floral pink gin from Deerness Distillery, built around juniper, rose, elderflower, vanilla and cardamom. Its name refers to spring in Old Norse, and the bottle follows that idea through aroma rather than through heavy sweetness. The recipe gives it a softer visual and sensory identity than a dry gin, but the most useful way to understand Vára is still as a gin with a floral-spiced frame, not as a simple pink drink.

The nose opens with rose and elderflower, two botanicals that can become perfumed if handled too heavily. Here they are best read against juniper, vanilla and cardamom. Juniper gives a dry base, vanilla rounds the texture, and cardamom adds a clean, aromatic spice that prevents the floral side from becoming flat. The palate should feel gentle at first, then more structured as the spice appears. A tangy citrus impression lifts the finish, but no specific citrus botanical should be invented for the recipe. The interest is the balance between flower, creamier vanilla warmth and cardamom's brightness.

The perfect serve should avoid turning Vára into a sweet fruit drink. Use 4 cl of gin with 12 cl of Mediterranean tonic over ice, then garnish with a rose petal and a lightly crushed cardamom pod. That keeps the glass close to the confirmed botanicals and gives the tonic enough room to refresh the floral notes. A drier tonic is preferable if the drinker wants more juniper; Mediterranean tonic works best for an accessible, aromatic serve.

Vára is a good example of a pink gin that can remain composed. It has colour and softness, but its best version is not sugary: it is floral, lightly spiced, rounded by vanilla and still recognisably built on gin.

Rose and cardamom keep the serve close to the gin's floral-spiced profile, while the tonic refreshes the vanilla roundness without adding fruit syrup.
