Biggar Cask Aged Gin - Sherry takes the distillery's Old Tom profile into a warmer, oak-seasoned register. The base keeps Biggar's rounded botanical frame: juniper, coriander, cassia, marshmallow root, licorice root, orange, lemon, rosehip and lavender, with Belgian candi sugar giving the style its gentle polish. The extra point of character comes from contact with former Sherry cask staves, which adds amber colour, dry fruit warmth and a quiet wood-spice edge without turning the gin into a whisky substitute.

On the nose, the gin should feel familiar to anyone who knows Biggar's softer house style, but the cask detail changes the pace. Citrus peel and juniper arrive first, then cassia, licorice and lavender move into a deeper, slightly darker register. The Sherry wood brings hints of raisin skin, toasted oak and spice rather than overt sweetness. In the mouth, the Old Tom roundness is still present, but the stave contact tightens the finish and gives the gin more grip than a simple sweetened style.
