Gin de Nalinnes is a Belgian gin created in 2023 by three friends and family members, Alex, Mike and Guillaume, who wanted to give their village of Nalinnes a spirit of its own. Developed with the Distillerie de Biercée, the 40% ABV gin carries the phrase "the gin of our roots" on its label and combines a clearly local story with a deliberately generous fruit and botanical recipe. It is sold in a 70 cl bottle whose green and gold design reflects the identity of the project.

The recipe brings juniper together with mango, passion fruit, ginger, navel orange, yuzu, fresh mint, vanilla, rosemary, thyme and lavender. Mango and passion fruit give the opening a ripe tropical direction, while orange and yuzu bring a more vivid citrus edge. Ginger adds lift and a gentle warming note. The aromatic herbs and lavender prevent the fruit from taking over, giving the gin a fresher, greener line beneath its more exuberant first impression.

On the nose, the profile moves from sunny fruit towards mint, rosemary and thyme. The palate keeps that contrast in motion: mango and passion fruit bring roundness, citrus and ginger sharpen the middle, and juniper gives the whole recipe the dry structure expected from gin. Vanilla softens the transition into the finish without turning the spirit sugary. The final impression is fruit-led but botanical, with herbs and spice returning after the citrus has settled.

The house Gin'To is served in a balloon glass with 60 ml of Gin de Nalinnes, three to five large ice cubes, 200 ml of neutral tonic and a sprig of rosemary. Fever-Tree Mediterranean Tonic Water is a particularly coherent choice because its rosemary and citrus notes extend the herbal side of the recipe without competing with the fruit. Kept very cold and stirred only once, the serve lets the mango, passion fruit and garden herbs appear in succession rather than all at once.
