Bottled at 40.4% ABV, it was created around the familiar appeal of lemon drizzle cake, while keeping juniper at the centre of the glass. Its character comes from fresh hand-peeled lemon, sun-dried lemon peel and lemon verbena, selected to give the citrus more than a simple sharp top note.
The recipe opens with lively lemon oil and a clean herbal lift from verbena. Fresh peel brings immediate zest, while the dried peel adds a deeper, slightly candied register. Juniper supplies the dry spine that keeps the profile recognisably gin-led, rather than turning it into a sweet lemon liqueur.
On the palate, the lemon is rounded by a soft vanilla suggestion and a biscuit-like warmth that recalls the cake which inspired the gin.
