A French wheat spirit is distilled slowly in a former copper whisky still, allowing a recipe of juniper, Lebanese mint, coriander seed, angelica root, lemon peel, cassia bark, orris root and orange peel to settle into a composed whole. The mint is the distinctive thread, but it is not used to make the gin taste confectionary. Instead, it gives the citrus and spice a cool, aromatic lift and makes the profile immediately recognisable.
Juniper arrives first, clean and resinous, followed by lemon and orange peel. The palate then opens through coriander and mint, with a lively green note that keeps the citrus taut. Cassia supplies warmth, angelica and orris root give shape and dryness, and the finish develops a gentle caramel and toffee-like roundness without becoming sweet. At 43.4%, Daffy's has enough concentration for a long drink, yet it retains a supple texture that also works well over a large cube of ice.
