Sprig of RosemaryCopperhead Scarfes Bar Edition is a limited-edition gin created in collaboration with Scarfes Bar in London. It builds on the classic Copperhead botanical structure and adds pine nuts, pine blossom and an apple distillate to shape a profile that connects traditional gin spices with more resinous and orchard-like accents.
The recipe pairs juniper berries with coriander seed, cardamom, angelica and orange peel, then introduces the additional elements. Pine components bring a forest-like, balsamic character, while the apple distillate contributes a crisp fruit impression. The resulting style remains recognisably gin-led, with extra depth coming from the pine and apple notes.
On the nose, expect juniper and citrus peel supported by warm spice, with a distinct conifer and fresh-fruit lift. The palate continues with dry gin botanicals, then develops into earthy pine and crisp apple tones, while cardamom and coriander shape the spice backbone. The finish stays dry and aromatic, with lingering pine resin, gentle citrus bitterness and a subtle fruit echo.
It is well suited to a gin and tonic where a clean, not overly sweet tonic allows the pine and apple elements to remain clear. It can also work in classic serves where citrus and spice are central, while the pine and apple bring an additional layer without dominating.
