Created originally for April 2025, it is a distilled gin whose botanical selection is designed around the first green and citrus-bright notes of spring. Juniper remains the foundation, with coriander seed, angelica root and winter savory building a dry, herbaceous base. Lemon balm grown in the distillery garden and pink peppercorn provide the fresher, more lifted accents.

The botanical structure is precise rather than floral-sweet. Juniper supplies piney clarity and a firm dry core. Coriander gives a lightly citrusy spice, angelica adds a rooty, earthy bind, and winter savory contributes a savoury herb note. Lemon balm is the key brightener, bringing a leafy lemon freshness rather than the sharper character of juice or peel.
