Whisky Barrel Gin Description

Whisky Barrel Gin is Four Pillars' Australian cask-strength gin at 56.8% ABV, created with LARK Distillery. The producer states that Rare Dry Gin was aged for around four years in Sherry and Apera barrels, then transferred to LARK whisky barrels for a final maturation of about six months. This extended barrel work gives the gin a profile of dark spice, preserved citrus and malt, with soft vanilla notes. It is a genuine barrel-aged expression rather than a standard gin packaged for whisky drinkers.

The underlying botanical recipe brings juniper, coriander, cardamom, cassia, star anise, lavender, angelica, Tasmanian pepperberry, lemon myrtle and orange. Juniper remains the structural point, while coriander and lemon myrtle pull the aromatic profile toward citrus. Cardamom, cassia and star anise build the darker spice register, and the Australian pepperberry gives a lively peppery edge. The casks add dried-fruit, malt and vanilla impressions that sit around the botanicals instead of replacing them.

On the palate, this is a concentrated, warming gin. Orange and preserved citrus open the profile before oak, dark spice and malty notes become more evident. The high proof gives texture and length, so a small dilution is useful for tasting it neat. Its finish can show soft vanilla alongside pepper, spice and an echo of sherry-seasoned wood. Because it is bottled at cask strength, it rewards measured mixing rather than a large volume of tonic.

For a composed gin and tonic, pour 5 cl over clear ice, top with 12 cl of very cold Fever-Tree Indian Tonic Water and stir once. Express an orange peel over the surface, then add one star anise as an aromatic garnish. The shorter, dry tonic serve follows the orange and dark-spice character while leaving the barrel, malt and vanilla notes present.
