Rosemary SprigThe name refers to juniper, not to strength. Boatyard brings juniper into contact with the spirit twice, at the beginning of the process and again at the end, and Double Gin describes that repetition rather than any doubling of proof. Everything else in the recipe is arranged around the consequence.
Eight botanicals, macerated for eighteen hours in organically produced wheat spirit, and the list is compact and almost entirely classical. Coriander seed adds dry spice and a citrus lift. Angelica root and orris root give depth and hold the structure together. Liquorice root brings a gentle roundness without sweetening anything, grains of paradise add warmth, and lemon peel supplies the bright citrus edge. Then there is sweet gale, harvested from the founder's family farm: green, herbal and slightly resinous, it is the one ingredient tying the recipe to the ground the distillery stands on.
That ground is the shore of Lough Erne in County Fermanagh, at Tullybay Marina near Enniskillen, and Boatyard presents itself as the county's first legal distillery since 1890.
The nose leads immediately with juniper, piney and resinous over fresh lemon peel, with coriander and grains of paradise adding a discreet spiced lift and the sweet gale a leafy, faintly wild impression. The palate is dry, structured and assertive without weight: juniper first, then zesty lemon and dry coriander, then angelica and orris grounding the middle, then the gale and the grains extending the close on herbal, peppery, gently earthy notes. Long, dry and botanical at the finish.
At 46% it carries a Gin and Tonic cleanly, and a Dry Martini shows the structure best. Indian tonic and a lemon garnish, which the recipe has already argued for.

Fresh Grapefruit Slice
Rosemary SprigFill a chilled copa glass with large clear ice cubes.
Pour 5 cl of Boatyard Double Gin, then add 15 cl of London Essence Grapefruit & Rosemary Tonic Water slowly down the side of the glass.
Stir once.
Garnish with a fresh grapefruit slice and a small rosemary sprig, keeping the garnish aromatic but restrained.
