Ginderella Gin is a Belgian New Western Dry Gin from Heynsquared, created around the idea that overlooked plants can become serious botanical ingredients. The gin is closely linked to Ghent and to fresh foraging: its identity comes from a set of extracts that combine classic gin references with edible weeds and invasive plants gathered in the surrounding area. This gives Ginderella a personality that is both local and contemporary, with a botanical story that goes beyond a standard citrus-and-juniper recipe.

The recipe is built around nine extracts divided between three classic botanicals, three weeds and three invasive species. Juniper provides the gin structure, while kaffir lime brings a vivid citrus accent and black pepper adds dry aromatic warmth. The foraged elements include herb-robert, Japanese knotweed, lesser swine-cress, Armenian blackberry and giant hogweed. These plants give the gin a green, earthy and slightly wild dimension, reflecting the producer's focus on fresh material rather than a purely conventional dried-botanical profile.

Instructions

Fill a large balloon glass with very cold, solid ice cubes.

Pour 5 cl of Ginderella Gin over the ice, then add 15 cl of Thomas Henry Tonic Water slowly along the side of the glass to preserve the bubbles.

Stir once or twice with a bar spoon.

Garnish with a fresh kaffir lime leaf, lightly flexed between the fingers before placing it near the rim so its citrus-green aroma opens above the glass.
