Komasa Jyozo keeps the rest of the recipe deliberately short - juniper, coriander seed and a rice shochu base - so that nothing competes with that fruit. The restraint is the design: where many citrus gins spread themselves across lemon and orange, this one narrows to a single local variety and lets it define the bottle at 45% ABV.
The nose opens on fresh peel and soft mandarin over a clean juniper line. Coriander seed adds a dry spice that stops the fruit from rounding out too easily, and the shochu base leaves a subtle grain and rice-like smoothness in the texture. The palate is bright and direct, with the komikan moving between sweet peel, fresh juice and a fine bitter edge that appears just before the end. Juniper stays present enough to keep everything dry, while the coriander runs a light spice through the middle of the mouth.
Its structure at 45% suits a gin and tonic well, provided the tonic stays neutral and lets the citrus speak without argument. A twist of mandarin peel or a simple orange zest works better than thick fruit slices, which flatten the aromatics rather than extending them. Serve it very cold, in a glass with enough ice to hold the temperature, and pour slowly so the peel oils stay in the drink instead of blowing off in the first rush of bubbles. It closes clean and citric, on a light bitterness, with the rice base contributing smoothness rather than sweetness. This is an unusually readable gin: focused, local, aromatic and refreshing, dry enough for classic gin drinkers and clear enough in its fruit to make a plain highball feel like a specific choice.
