Four ingredients. Juniper, cherries, lemon peel and bergamot, infused into an organic grain distillate, and that is the whole recipe: Michel Bouillon chose precision over a long botanical list, and a gin this short either works or has nowhere to go.

The distilling behind it is older than the brand. Louis Bouillon set up a distillery near Grace-Hollogne in 1898; Michel grew up in that environment, spent fifteen years working in other distilleries, and founded his own house in 2012, where he also makes one of the first certified organic pekets in Belgium. The organic commitment runs through the whole range rather than sitting on this label alone.

Two of the four are citrus, and they do different jobs. Lemon peel gives the direct sharpness that opens the nose. Bergamot is the more refined of the pair, floral and perfumed where lemon is simply bright, and without it the citrus would read as ordinary. Juniper sits behind them with the resinous, faintly herbal structure a London Dry needs. Cherry is the surprise: it rounds the middle without adding real sweetness, a soft fruit depth that emerges gradually rather than announcing itself.

The attack is fresh and direct, citrus-led. The middle turns rounder as the cherry supports the juniper, the texture stays smooth without weight, and the finish is clean, faintly fruity and lightly herbal. Neat is where the clarity shows best, since the recipe offers nothing to hide behind. Mixed, hold the tonic plain and cut the garnish down to a strip of lemon, and the four ingredients stay individually audible. A recipe this brief declares a certain confidence: there is no fifth botanical to blame if the balance goes wrong, and no way to disguise a rough distillate.
