Defiance Gin is produced by Defiance Distillery, a small independent distillery located in Oldham in the north of England. Founded in 2017 by Paul Sheerin, the distillery was built around a philosophy of precision distillation and botanical experimentation. Rather than following a strictly traditional London Dry approach, Defiance Gin embraces a more exploratory style while maintaining a structured and recognizable gin identity centered on juniper.

The composition of the gin is based on a broad selection of botanicals, with particular emphasis on forest and aromatic elements. Alongside juniper, the recipe incorporates Douglas fir, Sitka spruce tips and sweet cicely, which contribute to a distinctive green and resinous profile. Citrus peel provides brightness and lift, while cassia bark introduces a warm, spicy dimension. Additional elements such as sweet flag and myrrh resin bring earthy and slightly bitter undertones that deepen the overall complexity of the spirit.

On the nose, Defiance Gin presents a layered aromatic structure. Juniper appears clearly, supported by fresh pine and forest-like notes derived from coniferous botanicals.
