Crafted by St. George Spirits in Alameda, this gin features a harmonious blend of botanicals, including locally sourced Douglas fir, California bay laurel, and coastal sage. The production process is meticulous: Douglas fir and sage are distilled separately to account for seasonal variations, while bay laurel and juniper are vapor-infused. Wok-roasted coriander, along with other botanicals, is macerated and distilled in a copper pot still. The result is a gin with pronounced woodsy notes of pine and sage, complemented by herbal undertones and a hint of citrus. With an ABV of 45%, it offers a robust and complex flavor profile, making it versatile for various cocktails or enjoyable on its own.

For tasting, begin with the gin well chilled so its aromatic direction is clear before dilution. A gentle gin and tonic is the recommended long serve: use 5 cl of St. George Terroir Gin, 15 cl of Fever-Tree Mediterranean Tonic Water and plenty of clear ice.
