The project was developed with the intention of creating a so called single city gin, using botanicals that can be sourced within or around the urban environment of Ghent. This approach places geographical origin at the center of the gin’s identity rather than relying on exotic or imported ingredients.
The botanical composition follows a classic gin structure built on juniper, coriander seeds and angelica root, providing a traditional backbone. Citrus peels bring freshness and brightness, while the inclusion of locally sourced grapes introduces a subtle fruity dimension that reflects the regional agricultural landscape and distinguishes the gin from more conventional London Dry styles.
On the nose, juniper appears clean and direct, supported by fresh citrus notes and light herbal tones. The palate is balanced and approachable, combining gentle juniper, soft spice from coriander, and a rounded fruit character from the grapes. The mouthfeel is smooth and medium bodied, leading to a clean finish with lingering citrus and herbal freshness.
