Generous Purple Organic Description

Pour the tonic in and the colour changes. The purple in this bottle comes from grape anthocyanins, the same pigments that colour red grape skins, and anthocyanins shift with acidity, so contact with tonic or a squeeze of citrus moves the glass toward pink. Nothing artificial is involved, which is why the shift happens at all. Maison Villevert makes it in France at 44%, organic.

Timut pepper is the other unusual entry. It comes from Nepal, and unlike black pepper it is aromatic long before it is hot, with a natural citrus character that people most often compare to grapefruit zest and yuzu. Setting it beside organic pink grapefruit is therefore a doubling rather than a contrast: the pepper repeats and extends the fruit instead of cutting across it, and what it adds on top is a light tingling on the tongue that no citrus could produce. Juniper remains below as the structure, present without argument, letting the fruit and the spice work in front of it.

The nose is clean and precise, pink grapefruit and fresh peel leading, with floral and faintly herbal tones behind and a peppery note that reads as citrus. The palate opens juicy on grapefruit, the Timut signature follows with its tingle and its spicy-citrus freshness, and the balance stays dry and bright throughout. The finish is persistent: citrus zest, a light grapefruit bitterness, an aromatic pepperiness that fades slowly.

A neutral or lightly bitter tonic shows both the colour and the profile. Garnish with a slice of pink grapefruit or a citrus twist, and pour the tonic last so the change is visible. A colour that moves because of chemistry rather than a dye is a small thing, and small things of that kind separate a recipe from a marketing exercise. It ends citric, peppery and dry.
