The core botanicals include juniper berries, spruce buds picked in spring, bilberry leaves, vulnerary, Alpine tea and elderflower, to which iris root adds a floral and slightly powdery dimension. Each botanical bouquet is distilled separately or in small groups in traditional copper stills, and no sugar or other additives are introduced, in keeping with the classical dry gin style.
On the nose, Bigallet Gin Bio S shows a distinctly vegetal profile, evoking a damp forest floor with fresh undergrowth and mossy notes.
