Thin Slice of Fresh Yuzu PeelKI NO TOU is an Old Tom Gin created by The Kyoto Distillery. It is based on KI NO BI Kyoto Dry Gin and is sweetened with kokutou, a traditional black sugar from Okinawa. Locally sourced botanicals include yellow yuzu, shiso leaves, bamboo leaves, ginger, lemon, gyokuro green tea from Uji, and green sansho. The ingredients are distilled separately before blending. The resulting gin offers a mildly sweet profile balanced with citrus and herbal notes.

Thin Slice of Fresh Yuzu PeelIn a chilled highball glass, pour 5 cl of KI NO TOU Old Tom Gin, a Japanese spirit sweetened with Okinawan kokutou black sugar.
Add a large ice sphere to maintain a slow dilution, preserving the gin's rich flavors.
Top with 15 cl of East Imperial Yuzu Tonic, whose bright citrus notes complement the gin's yuzu and lemon botanicals.
Gently stir to integrate.
