Garnish
Thin Slice of Nashi PearKi No Bi Sei is a Navy Strength gin from The Kyoto Distillery, bottled at 54.5% ABV. Distilled from a rice spirit base, it uses 11 botanicals including juniper, yellow yuzu, akamatsu (red pine), red shiso, bamboo leaves, ginger, lemon, orris, gyokuro tea, green sansho and kinome. The botanicals are grouped and distilled separately before blending, then reduced with Fushimi water from Kyoto.

Thin Slice of Nashi PearIn a highball glass, place a large, clear ice cube to maintain the integrity of the drink without excessive dilution.
Pour 5 cl of Ki No Bi Sei Navy Strength Gin over the ice, allowing its robust 54.5% ABV and intricate blend of Japanese botanicals to shine.
Top with 15 cl of Fever-Tree Indian Tonic Water, chosen for its crisp bitterness that complements the gin's citrus and herbal notes.
Gently stir to integrate.
Garnish with a thin slice of nashi pear, its subtle sweetness balancing the gin's intensity.
