The heat does not arrive at the front. Capsicum builds across the centre, well after the citrus has spoken, and that delay is the whole design: warmth is used as a structural element rather than as a headline, and a chilli gin that burned on the attack would have nothing left to say afterwards. Ardent makes Apotek Capsycum in Belgium at 40%.
Citrus · Organic · Spicy · Fruity · Herbal
Three citrus fruits do the opening work. Lemon peel is the sharpest, grapefruit brings the bitterness that stops the top from sweetening, and mandarin peel rounds the pair with a softer, more perfumed note. Juniper stays clearly present through all of it rather than yielding, which is what the dry classification requires. Cardamom and coriander add the aromatic complexity underneath, the first cool and camphorous, the second a warmer seed spice, and between them they produce the lightly peppered character the nose shows before any real heat appears.
Then the capsicum develops, controlled and gradual, and it enhances rather than dominates. The texture stays clean and dry throughout, and the close is crisp, its heat lingering without ever stinging. Organic grain distillate and pure water underneath all of it.
Restraint is the right instruction for the garnish, since anything assertive will collide with the capsicum rather than support it. Neutral tonic, and ice without stinting. It also suits cocktails that want a subtle heat behind a citrus structure, where the chilli does the work a dash of bittersBittersHighly concentrated bitters (Angostura, orange…), added in dashes to season a cocktail.Glossary would otherwise have to. Naming a gin after the ingredient that arrives last is unusual and, in this case, accurate: the capsicum is the thing you remember afterwards, and also the thing you notice least at the start, which is a difficult sequence to engineer on purpose.
