Leodium Community Edition Description

Belgium's oldest distillery making a fully organic gin is a combination of old and new that could easily feel forced, and the recipe avoids that by keeping the botanical list short. Leodium works ginger, lemon and rosemary together with other organic botanicals at 40% ABV, and those three named ingredients cover three different registers - spice, citrus and herb - without any one of them ever needing to shout the others down.

Ginger is the ingredient that supplies the gin with its energy. It arrives warm rather than hot, building steadily mid-palate with the dry snap that fresh root has and dried powder never does. Lemon works above it, sharp and clean, lifting the aroma and stopping the spice from settling too heavily. Rosemary is the third voice and the one that ties the other two together: resinous and green, it meets the juniper naturally and gives the whole thing a savoury, almost culinary edge. The organic sourcing shows less as a flavour than as clarity, with nothing muddy or half-defined anywhere in the profile. The palate is vibrant and quite dry, spice and citrus arriving together rather than in sequence.

A gin built on three clear notes deserves a build that keeps them separate. Use a plain tonic, ice the glass generously, and settle on a single garnish: a strip of lemon peel sharpens the citrus, a short rosemary sprig pushes the herbal side forward, and a thin coin of fresh ginger leans into the spice.
