See the perfect serveVine peach is a small, dark-fleshed variety once grown between the rows in vineyards, and it is the botanical from which this French gin takes its character. H. Mounier has been distilling at Gensac-la-Pallue since 1858 and reduces the spirit with local spring water, setting the peach against juniper and ginger at 43% ABV in a recipe that stays deliberately short.
The peach arrives as smoothness far more than as flavour, and that is the interesting part of it. It brings a delicate, slightly floral roundness that softens the whole palate without adding any obvious fruit sweetness, and that texture is what separates the bottle from a straightforward dry gin. Juniper works against it with a crisp green freshness, holding the shape firm where the peach would otherwise have let it spread. Ginger arrives last and provides a subtle warmth right through the finish, drawing the other two together rather than adding a third direction of its own. The strength gives the whole thing enough carry to work, and the spring water shows itself as clarity rather than as any taste of its own.
Three botanicals leave nowhere at all to hide, so what you build around them should be equally plain. Neutral tonic poured over a thoroughly iced glass will do, with a coin of ginger picking up the spice or a slice of peach following the headline; one or the other, never both. It drinks well without anything added, barely chilled, where the peach texture is clearest and the ginger warms the close. Avoid sweet mixers, which erase the peach entirely. A gin resting on only three botanicals succeeds solely if one of them is genuinely worth building around, and the vine peach earns that place. It ends smooth, gently spiced and dry.

Fresh Rosemary SprigFill a large balloon or highball glass with plenty of ice.
Pour 6 cl of Source Gin over the ice, then add a dash (about 1 cl) of fresh lemon juice and stir gently to chill.
Top with 18 cl of Thomas Henry Naturally Light Tonic Water—chilled, never flat.
Garnish with a thin wheel of Meyer lemon and a sprig of fresh rosemary for an aromatic lift.
