Eden Mill Golf Gin Description

Eden Mill Golf Gin is a Scottish London Dry Gin bottled at 42% ABV and built around a very specific link with St Andrews. Rather than using golf only as a visual theme, Eden Mill anchors the gin in botanicals connected to the Old Course: gorse, heather and lavender are gathered from the course, then combined with juniper and Scottish kombu seaweed. The result is a dry gin whose identity comes from a real place, with the flowers and coastal vegetation of St Andrews shaping the aromatic direction.

The recipe is deliberately concise compared with many modern gins. Juniper keeps the gin within a clear London Dry frame, while gorse, heather and lavender create the floral side of the profile. Gorse brings a warm yellow-flower note and is associated by Eden Mill with a soft coconut-like sweetness. Heather gives a drier, more heathland-like floral tone, and lavender adds aromatic lift. Scottish kombu provides the most unusual accent: it gives a subtle saline touch beneath the flowers, enough to suggest coastal air without making the gin taste heavily briny.

On the nose, Golf Gin opens with juniper and a broad floral character. Lavender is visible but should not be read as a perfume note; it sits alongside heather and gorse, giving the aroma a dry, grassy and gently sweet floral lift. The coastal element appears more quietly, as a saline suggestion from the kombu rather than a dominant seaweed note. This keeps the gin clean and approachable while still giving it a distinct identity.

On the palate, juniper leads first, then the floral botanicals expand through the middle of the mouth. Gorse brings a soft sweetness, heather and lavender keep the profile dry and fragrant, and kombu adds a savoury line that balances the flowers. Eden Mill tasting notes for the current presentation of Golf Gin point toward bold juniper, gorse sweetness, heather and lavender, followed by a peppery finish with juniper and candied lavender. That peppery finish is important because it prevents the gin from becoming only floral.

The finish is dry, floral and lightly saline, with a clean peppery edge. Golf Gin works naturally in a gin and tonic where the mixer does not overwhelm the Old Course botanicals. A neutral or Mediterranean tonic can work well, especially with a restrained lemon peel garnish to brighten the floral and herbal notes. Lavender can echo the recipe, but it should be used sparingly. The gin also suits a dry Martini style serve, provided the vermouth remains discreet and the garnish stays citrus-led.

Indian tonic keeps the London Dry frame sharp. Bitter orange and cardamom mirror the recipe without making the drink sweet.
