HAVN MRS Gin Description

Santolina grows on dry Mediterranean hillsides and almost never reaches a still. Silvery, camphorous and faintly bitter, it is the botanical that stops this from being just another rosemary-and-thyme gin, and the Marseille edition smells specifically of that coast because of it rather than generically of the south. Raven Spirits bottles it at 40%.

Rosemary and thyme do carry the bulk of the herbal weight, and they carry it hard. Rosemary is resinous and pine-adjacent, thyme drier and more savoury, and together they read as sun-dried hillside rather than as garden. Juniper holds a clear backbone underneath them, which counts for a great deal when the herbs push this hard, and coriander seed adds freshness and aromatic balance so that the green half does not turn severe. Clove is the surprise at the bottom: a gentle warming spice that adds depth without pushing, and the length of the close comes from it.

The palate is expressive and still balanced. Juniper leads, then the herbal core arrives with rosemary, thyme and coriander intertwined rather than sequenced, the clove warms the middle, and the santolina keeps a slight bitterness running underneath the whole thing. Texture smooth, dry throughout, and the finish persistently herbal with a restrained warmth.

A Mediterranean-style gin and tonic is the intended serve. Rosemary or thyme as a garnish repeats the recipe honestly, and nothing more elaborate is needed. A port city translated into herbs is a different exercise from translating one into seaweed, and this one names its coast without ever mentioning the water. Santolina is the detail that decides the outcome, and it is also the one nobody will identify without being told what it is.
